"Edo-Tokyo vegetables" are traditional, heirloom (open-pollinated) vegetable varieties that were cultivated in the area surrounding present-day Tokyo from the Edo period through the 1960s, with their seeds preserved and passed down by people ever since. Characterized by their unique flavors and shapes—as well as the "stories" they carry, which are deeply linked to local history and culture—there are currently 52 varieties of Edo-Tokyo vegetables that have been officially certified.

Open Air Architectural Museum, "Edo-Tokyo vegetables" are cultivated as a dynamic exhibition around the Farmhouse of the Tsunashima Family that once stood in the "Edo-Tokyo" region during the period spanning from the Edo era to the Showa era.
